One pot dirty rice

🥕 Prep Ingredients

Ingredients:

  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 jalapeño, finely chopped (optional)
  • 4 garlic cloves, minced
  • 4 green onions, chopped (separate white and green parts)
  • 1 bunch cilantro, chopped

🍳 One-Pot Dirty Rice

Ingredients:

  • 1 tbsp olive oil
  • 800 g lean ground beef
  • 1 tbsp pepper paste (or tomato paste)
  • 1–2 tbsp soy sauce
  • Salt & black pepper (to taste)
  • Cajun seasoning (to taste)
  • 4/3 cups short-grain rice, washed
  • 2.5 cups water or stock
  • Cilantro & green parts of green onions (for garnish)

Instructions:

  1. Heat olive oil in a large pot over medium heat for 2–3 mins.
  2. Add onions, bell pepper, jalapeño, and white parts of green onions. Stir for 3–5 mins, seasoning with salt and pepper.
  3. Add ground beef and break it apart with a wooden spoon. Cook until browned.
  4. Make a well in the center and add garlic and pepper paste. Stir to incorporate for 2–3 mins.
  5. Add soy sauce, black pepper, and Cajun seasoning; stir 2–3 mins.
  6. Stir in rice for 1–2 mins, then add water/stock. Mix well.
  7. Bring to a light bubble, reduce heat to simmer, cover, and cook 20 mins.
  8. Turn off heat and mix in cilantro and green parts of green onions.
