BEEF SKEWERS & POTATOES w/ YOGURT SAUCE & SALAD

Dish: Beef skewers and potatoes w/ yogurt sauce & salad


Beef Skewers

(Makes ~9 skewers depending on size)

Ingredients:

  • 1 lb lean ground beef
  • ½ cup breadcrumbs
  • 1 tbsp olive oil
  • 1 onion, minced (drain out onion water)
  • 2–3 cloves garlic, grated
  • 1/2 bunch parsley, finely chopped
  • Spices (to taste): salt and Arabic 7 spice blend

Instructions:

  1. Mix all ingredients in a large bowl until combined.
  2. Form mixture into skewers.
  3. Place skewers to a large pan (coated with cooking spray) on medium-high heat (tip: ensure pan has sufficiently preheated).
  4. Flip skewers after 4-5 mins (ensure good crust is developed before flipping).
  5. Cook for another 4 mins on the other side.

Baked Potatoes

Ingredients:

  • 4 yellow potatoes (~ 600 g)
  • 1 tbsp olive oil
  • 1 tbsp honey
  • Salt, black pepper, and garlic powder (to taste)

Instructions:

  1. Preheat oven (set to bake) to 400F (tip: do this while you prep potatoes).
  2. Peel potatoes and dice into ~ 1-1.5 in cubes.
  3. Place in a large mixing bowl and add remaining ingredients to the bowl.
  4. Mix well, and then transfer to a baking tray lined with parchment paper.
  5. Place in oven (once preheated) to bake for 30-40 min (depending on size of cubes).

Yogurt Sauce

(Keeps ~1 week in fridge)

Ingredients:

  • 4 tbsp Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 clove garlic
  • Handful fresh dill
  • Small cucumber
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • Salt & black pepper (to taste)

Instructions:

  1. Add Greek yogurt and mayonnaise to a bowl.
  2. Grate 1 clove of garlic into the bowl.
  3. Finely shop cucumbers and dill and add to bowl.
  4. Add remaining ingredients and mix well.
  5. Store in fridge to keep cool before serving.
  6. Ensure it is kept in fridge in a sealed container.

Simple Salad

Ingredients:

  • 1 bell pepper
  • 1 small cucumber
  • 1 small tomato
  • 1 tbsp olive oil
  • 1 tbsp honey
  • Juice of 1/2 lemon
  • Salt and cumin (to taste)

Instructions:

  1. Finely chop all veggies and add to a bowl.
  2. Add remaining ingredients to the bowl and mix well.
  3. Store in fridge to keep cool before serving.
