Salmon
Ingredients:
- 2-3 Atlantic salmon fillets (~250 g)
- 1 tbsp olive oil
- Salt, black pepper, cajun, garlic powder (to taste)
Instructions:
- Marinate salmon with seasoning mix and olive oil (distributed evenly on fillets)
- Add 1 tbsp olive oil or cooking spray to a large non-stick pan on medium heat (allow enough time for pan to heat up – 3-5 mins)
- Place salmon in pan laying away from you
- Place a small pot, press, or chef’s weight on top of the fillets to maximum surface contact with the pan for a better sear (tip: do not move the salmon to ensure a good crust develops)
- Sear on the first side for 3-5 min (tip: gently lift up the fillets to inspect the sear on the other side to know when to flip)
- Flip fillets and repeat the same for the other side (weight on top of the salmon and searing for 3-5 mins)
- Optional: if both sides are sufficiently seared but middle still looks raw, flip the fillets on their side to ensure fillets are cooked all the way through (135F)
Mashed Potato
Ingredients:
- 4 medium sized yellow/white potatoes
- 1 cup 5% cream
- 1.5 tbsp butter
- 3 cloves of garlic
- Salt and black pepper (to taste)
Instructions:
- Peel potatoes and cut into large 2-3 in cubes
- Transfer cubes to a pot with enough water to cover the potatoes on high heat
- Add a big pinch of salt (similar to cooking pasta), put the lid on, an bring water to a boil. Potatoes should be ready and fork-tender in around 15 min
- While potatoes boil, add butter and grated garlic to a saucepan on medium heat
- Mix to incorporate until butter has melted and garlic is fragrant
- Add cream, and whisk/mix well to incorporate (4-6 min). Turn heat off and add lid to keep warm
- Drain potatoes when done, and use a potato masher or ricer to break down the potato, adding the cream mixture gradually
- Season to taste with salt and black pepper
Green Beans
Ingredients:
- 300 g green beans
- 1/2 tbsp butter
- Juice of 1/4 lemon
- Salt and black pepper (to taste)
Instructions:
- Bring a pot of water to boil. Place green beans in a strainer/colander over the boiling water, cover, and steam for 4 mins.
- Transfer beans to an ice bath to stop cooking and maintain bright green color.
- Heat a large pan on high with cooking spray for 2–3 mins. Add beans and season immediately with salt.
- Leave beans untouched for 1 min to develop color, then stir. Repeat for 4–5 mins total, ensuring beans remain slightly undercooked.
- Turn off heat. Add butter and lemon juice. Mix well to coat and serve.
Creamy Dill Sauce
Ingredients:
- 1 cup 5% cream
- Handful of fresh dill
- 2 cloves of garlic
- Juice of 1/4 lemon
- Salt and black pepper (to taste)
Instructions:
- In the same pan the salmon was cooked in on medium heat, add grated garlic and mix well for 1-2 min
- Add cream, mix well, turn heat down to medium-low, cover with a lid for 3-4 min until mixture slightly simmers
- Kill heat, add finely chopped dill, lemon juice, salt and black pepper and mix well to incorporate (tip: taste and adjust for seasoning/lemon juice)
