🥦 Veggie Prep
Ingredients:
- 1 jalapeño, finely chopped
- 1 onion, finely chopped
- 4 cloves garlic, minced
🥩 Harissa Beef & Veggies
Ingredients:
- 1 kg lean ground beef
- 400 g frozen veggies (e.g., green peas, green beans, carrots, corn)
- 2 tbsp harissa paste
- 2–3 tbsp soy sauce
- 7-spice blend (or your choice of spice)
- Salt and black pepper to taste
- Cooking spray
Instructions:
- Preheat a large pan on medium-high heat with cooking spray for 3–4 mins.
- Add frozen veggies and sauté for 5 mins. Season with salt and pepper. Set aside.
- Respray pan with cooking oil, add chopped onion and jalapeño, sauté 3–4 mins until translucent. Season with salt and pepper.
- Add ground beef and break it down thoroughly with a wooden spoon, cooking ~10–12 mins until mostly done.
- Make a well in the centre, add garlic and harissa paste, and mix for 2 mins.
- Season liberally with 7-spice blend and soy sauce, mixing for another 3 mins.
- Serve with 1/3 cup cooked white rice per serving (5/3 cups total).
