Hot Honey Chicken

Ingredients:

  • 5 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • Salt, black pepper, paprika, garlic powder (to taste)
  • 3 tbsp favorite hot sauce (ensure it is 0 cal)
  • 4 tbsp honey

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken breasts into ~1 in cubes
  3. Transfer to a large mixing bowl and add seasoning as well as olive oil and mix well
  4. Transfer to a baking tray lined with parchment paper and bake in oven for 20 min (check for doneness (165 F internal))
  5. While chicken bakes, mix the hot sauce with the honey in a bowl to make the hot honey sauce
  6. Add sauce to the chicken once out of the oven

Potatoes

Ingredients:

  • 1.5 kg yellow/white potatoes
  • Salt, black pepper, paprika, garlic powder (to taste – exactly like chicken)
  • 1 tbsp olive oil

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry potatoes well
  3. Cut potatoes into 1 in cubes and place into a large mixing bowl
  4. Add seasoning mix and olive oil and mix well
  5. Transfer to a baking tray lined with parchment paper and back in oven for 40 min
  6. Tip: place this in oven before anything else as it takes the longest to cook

Oven Baked Veggies

Ingredients:

  • 2 bell peppers
  • 1 hot pepper (optional for spice)
  • 1 medium size carrot (~ 250 g)
  • 1 medium yellow onion
  • 250 g frozen broccoli
  • 3-4 cloves of garlic
  • 1 tbsp olive oil
  • Salt, black pepper, garlic powder (to taste)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Dice all veggies (except for garlic) into large chunks
  3. Finley dice garlic cloves
  4. Add veggies to a large mixing bowl and add seasoning mix and olive oil
  5. Transfer to a baking tray lined with parchment paper and bake in oven for 25 min
