Flavorful, high-protein rice dish with ground beef and veggies — easy one-pot meal prep!
🥕 Prep Ingredients
Ingredients:
- 1 onion, finely chopped
- 1 bell pepper, finely chopped
- 1 jalapeño, finely chopped (optional)
- 4 garlic cloves, minced
- 4 green onions, chopped (separate white and green parts)
- 1 bunch cilantro, chopped
🍳 One-Pot Dirty Rice
Ingredients:
- 1 tbsp olive oil
- 800 g lean ground beef
- 1 tbsp pepper paste (or tomato paste)
- 1–2 tbsp soy sauce
- Salt & black pepper (to taste)
- Cajun seasoning (to taste)
- 4/3 cups short-grain rice, washed
- 2.5 cups water or stock
- Cilantro & green parts of green onions (for garnish)
Instructions:
- Heat olive oil in a large pot over medium heat for 2–3 mins.
- Add onions, bell pepper, jalapeño, and white parts of green onions. Stir for 3–5 mins, seasoning with salt and pepper.
- Add ground beef and break it apart with a wooden spoon. Cook until browned.
- Make a well in the center and add garlic and pepper paste. Stir to incorporate for 2–3 mins.
- Add soy sauce, black pepper, and Cajun seasoning; stir 2–3 mins.
- Stir in rice for 1–2 mins, then add water/stock. Mix well.
- Bring to a light bubble, reduce heat to simmer, cover, and cook 20 mins.
- Turn off heat and mix in cilantro and green parts of green onions.
